Noodles with Sesame Peanut Sauce

This sesame peanut sauce is not lacking for flavor-it’s rich and complex flavors of sesame, soy, ginger, and vinegar compliment the creamy peanut butter for a fantastic Asian-inspired dish. Pair with your favorite noodles, and you have a fantastic dinner ready in 15 minutes! Serves 4Inspired by Mark Bittman’s recipe in How to Cook Everything

What (your ingredients):

2 tablespoons sesame oil
2 tablespoons sugar
2 tablespoons rice, white wine, or champagne vinegar
3 tablespoons soy sauce
½ teaspoon tobasco or hot sauce
¼ teaspoon ground ginger
¼ teaspoon ground black pepper
½ cup peanut butter or tahini, or a mixture of both (I used only peanut butter) 
Sesame seeds and red pepper flakes, for topping

How (your directions):

Add all ingredients to a large bowl and whisk until smooth.

Toss with rice noodles, pasta noodles, or zucchini and cucumber noodles. Serve immediately if using zucchini and cucumber noodles, as the sauce will get watery if the noodles sit.

Top your noodles with sesame seeds and red pepper flakes (and even a dash of extra hot sauce if you like).
