“Before doing personalized nutrition coaching with Chelsea, I struggled with portion control and general confusion about eating habits. I often felt like I was making no progress. Chelsea helped me significantly improve my relationship with food, my relationship with my stomach, helped me understand intuitive eating, how to have balanced meals most of the time throughout the day, the importance of blood sugar levels and how to maintain steady levels throughout the day, and much more! With more than 8 pounds lost, Chelsea helped me have confidence that I can eat well and enjoy eating while understanding what my body needs. And now I know how to do this for a lifetime! Now I have a good relationship with food, can enjoy food in new ways, and am on good-speaking terms with my stomach!
Chelsea’s approach is non-judgmental and built on my strengths and realities. She’s a great listener and customized her coaching of me around my unique real-time needs. Thank you, Chelsea, for your upbeat, honest, thoughtful, insightful, savvy coaching!” – Phil Bergey, Ph.D., Executive Leadership Coach, Professor at University of Pennsylvania

“Throughout my life I have struggled with making consistent long-term beneficial nutrition choices. In working with Chelsea, I was given tools to change my thought process as it relates to food. Chelsea recognizes each person's body and nutritional requirements are unique, there is no "cookie-cutter" solution for her clients! Even though Chelsea has a strong educational background in nutrition, it is her approach in utilizing this knowledge, and her ability to not only listen, but hear her clients, that brought success to our interaction. Most importantly, Chelsea holds herself accountable and brings a caring and positive attitude to the journey. She is passionate about each person's success!” - Carol Hudson, Cyclist
"Chelsea's passion for healthy eating is contagious, and our employees left the workshop with tips, tricks, and snacks for successfully cruising through the 3 PM workday slump." - Sara Garven, Vice President, Home Care Medical
“Being more mindful of what works for me and what doesn't has helped me tremendously. And I feel good about the direction I've been going with it. Still doing intuitive eating which has been a game changer for me and has become a lot easier since I started. There's moments of course ;) But I’m proud of the work I've been doing.
Through trial and error, I'm finding what works for me and my body and needs. After all these years of trying to follow "one size fits all diets", paying attention and being mindful of how things work for me has helped me so much.” - Jennifer Bartel, Designer
“This was the first time I had ever attended a nutrition workshop. Chelsea was amazing and super helpful! I used to struggle with what to eat before a ride so that I didn’t lose energy. Sometimes I ended up eating too much before, or too soon before, and felt like a ton of bricks on my bike. I ate the meals Chelsea recommended at the specific time she recommended, and then my boyfriend and I went on our longest ride of the year! I felt great with tons of energy! Now, cycling feels better in general and I have the tools to prep for a ride and recover from it.” – Ashley Brinkman, Cyclist
"Battling increased fatigue during my third pregnancy, I met with Chelsea and significantly increased my understanding of my body's and my baby's nutritional needs. The information she provided me with was far more specific than that of my obstetrician! Not only was I empowered with scientific knowledge to better fuel my body, I was also given a realistic and individualized plan that has helped me meet my energy requirements and my changing body's needs. Totally worth the investment! Thank you Chelsea!" - Amanda Cinadr, Mom of 3
“Chelsea, I finished the ultra and felt great the whole way. Stuck to my food plan. Thanks for your help. Was very helpful today and during training and will be very helpful as I transition back to normal diet.” - Charlie Webb, Ultra Endurance Runner, Senior Project Manager, Jacobs
Before HEMS, I really struggled with having healthy meals readily available. It seemed like meal prepping was a great way to go, but would take up too much of my day. Trying to find obtainable solutions was difficult. There are plenty of good resources out there for meal prepping healthy choices, but they all seemed to take up too much time. Chelsea made it simple and easy! I love that she uses the same ingredients in her recipes. It helped to eliminate food waste and I didn't feel like I had to buy ingredients that I would only use once or would have a ton left over. I feel that I am more prepared to tackle healthy meals. After I'd prepared several meals and realized how much of a difference it was making during the busyness of a week, I knew that this was a helpful solution. I know that I have staple meals I can fall back on that are easy to prepare so that I don't revert back to unhealthy choices. HEMS is a system that works. Chelsea has such a positive attitude and makes your goals obtainable and not out of reach. -Lizzie D., Mom of 2
“Before I started Healthy Eating Made Simple, my biggest problem was finding good, easy recipes. Honestly, it felt overwhelming! There’s just too many places to look. My biggest “aha” moment during HEMS is how simple it is to eat healthy. I don’t skip breakfast. And I’m not snacking throughout the morning to make up for it. I love your recipes! Keep them coming!” -Julie Mainwood, President and Owner Mad Max Designs
My biggest struggle before I found Healthy Eating Made Simple was coming up with healthy meal options I was willing to eat. On my own, it felt futile. What’s different about HEMS compared to other healthy eating products and plans is the practical approach to nutrition. It’s based on science, not fads. I wanted help finding things I should eat and wanted to eat, not what I shouldn’t eat, and that’s what HEMS delivered. Since taking HEMS, I see a path forward in improving my food choices. I have confidence that there are healthy recipes that I can successfully integrate into my picky eating palate and gradually expand my tastes. I’m really glad this course crossed my path when it did. It was the perfect time for me to spend some energy making these changes. I look forward to keeping these habits going, and will be following Chelsea for more recipes and healthy eating strategies! -Alice Hagen, Business System Administrator, Milwaukee
“Before I found Healthy Eating Made Simple, I wanted more ideas for healthy and quick meals. But trying online recipes was often a waste of time and resources because my family (or I) didn’t like the results. I realized HEMS was actually working to help solve this when we were thinking “there’s no food in our house” and we’re going to get takeout but instead, within the same 15 minute time, made the quinoa and strawberry salad. I trust HEMS recipes because I know and like your cooking style, and indeed I loved many of the suggested meals. My absolute favorite part was that you thought through optimizing use of ingredients to stock the fridge and pantry with items that can be used in multiple recipes. HEMS is an extra tool to help me make good food choices. I have a few versatile and healthy ingredients stocked up, and I have some new, quick and healthy recipes in my repertoire. Making it easy to cook something wholesome makes for a few extra healthy meals every week that may have otherwise been Mac n cheese or takeout.” – Irina G., Engineer, Mom of 2
“The biggest struggle I faced before Healthy Eating Made Simple was time and keeping up on a regular basis with my healthy eating efforts. I felt frustrated because I was always going back and forth between making wholesome foods and then making quick fix-its that weren’t optimal. After Healthy Eating Made Simple, I am more aware of making daily changes and contributions to my overall health. I love the idea of “not breaking the chain” and just doing one thing with the intention of daily nourishment to continue creating better habits around my health. Healthy Eating Made Simple is different from other healthy eating courses, products, and plans because of the simplicity of it. I love how simple it is to follow, yet there is so much information as to the benefits of each food and meal suggested! I am starting to create more consciousness around why each food is good for me.” - Vanessa Raderman, Founder and Owner of Greenleaf Montessori School
